About Us

My wife has celiac disease. Our story goes back to the first pizza she ate that was made with a flour blend based on gluten-free wheat starch. After years of bland, crumbly, or crispy crusts, she took a first bite of this chewy, blistered crust, and said, "Oh my god. It's actually pizza. I forgot it could be like that."

Since then, we've been experimenting with our own gluten-free flour blends and have tried and tested every GF baking technique we've found. We think we've found something worth sharing.

It's the reactions and stories people share when they try our bread that really make us love doing this. Whether it's the person who hadn't had bread they loved in 20 years, or the gluten-eating dad in a GF household who didn't realize the sandwich he was eating was gluten-free, we love giving people their own version of the "I forgot it could be like that" moment. We hope we can share one with you, too.
